Guilt Free Treat: Raw, Organic, Vegan Brownies

Is it possible – guilt free brownies? Oh Yes. These rich morsels satisfy our sweet tooth and pose no threat to our waistline or our health. Four simple ingredients combine for chewy, sweet, chocolate squares that are ready to eat in less than thirty minutes.

Think it’s too good to be true? I did too until my friend Kelsey showed me how it’s done:


2 Cups Walnuts
1 Cup Raw Cacao Powder
2 Cups Pitted Majhool Dates
½ Cup Coarsely Chopped Almonds
Sea Salt to Taste

*It’s important to choose the finest ingredients for raw desserts. Opt for organic and choose the softest dates. Spring for the highest quality cacao, walnuts and almonds.


1. Place walnuts in food processor and blend until light and fluffy. These walnuts act as the “flour” for our brownies so avoid over processing. This will lead to stickier, oilier brownies (think walnut butter).

2. Add cacao and a pinch of sea salt once you’ve reached the desired consistency.

3. Add dates one at a time and watch as the mixture forms one big brownie ball! Add all the dates for sweeter brownies, fewer for a more savory batch.

4. Remove mixture from food processor and place in small pan. Fold in almonds.

5. Spread mixture evenly across pan and pat it firmly down to solidify.

6. Sprinkle cacao powder and sliced almonds on top.

7. Refrigerate for 20 minutes to set.
